Attendees to the 3 day conference include representatives from agencies and organizations that help educate people on how to keep communities healthy with the food they eat.
Aaron Herrera, CEO of the nonprofit Hunger Free Texans, a co-sponsor of the event, says everything stems from food.
“Certain chronic conditions like hypertension can be more manageable. Diabetes can be better controlled if we eat certain foods. And so, there are many chronic conditions that we can help manage a little bit more if we just kind of paid a little bit more attention to our diet, and food in general,” Herrera says.
Annette Greene founder of I2F, Information to Freedom Institute for Holistic Living, says we are what we eat.
“We need to understand: What it is we’re eating. How we’re eating it. Why we’re eating it. What can we eat to help with certain different issues that we may have. And so that’s our whole goal, is to help people sort through all of that,” Greene says.
The conference included discussion on ways to eliminate “food deserts.” They are geographic areas where access to affordable healthy food options, is limited or nonexistent.
