Louie Comella, owner of the popular Houston Heights gelato shop Gelazzi, explains the artful process of making delicious, quality gelato. The process requires discipline (waking up early to gather fresh ingredients; keeping equipment in working order), as well as knowledge and instinct about compatible flavor profiles. Comella and his partner Leigh Rubino take us through the tasks of making Gelazzi's most popular gelato flavor (pistachio), and Comella talks about his family's heritage and history of making high-quality frozen confections.
